Soba Noodles with broccoli and carrots (Vegan, Vegetarian)

Ingredients

  • 250 g soba noodles
  • 30 ml olive oil
  • 500 g broccoli separated into florets
  • 200 g carrots cut to 1cm thick slices
  • 30 ml coconut aminos or balsamic vinegar

Instructions

  1. Prepare the soba noodles according to package directions. Drain and place aside.
  2. In a bowl, toss the broccoli with carrots, olive oil, and balsamic vinegar.
  3. Preheat oven to 220C.
  4. Transfer the broccoli and carrots into baking dish.
  5. Roast the veggies for 15-18 minutes.
  6. Remove the veggies from the oven and stir in the soba noodles.
  7. Serve warm.
