Heat your oven to 220C.

Toss the carrots with 5ml olive oil on a rimmed baking sheet.

Push the carrots on side and season with salt.

Place the turkey on the same baking sheet and coat with whole grain mustard.

Bake for 25 minutes.

In a large bowl, toss the broccoli with remaining olive oil. Season to taste.

Toss broccoli with carrots onto baking sheet and continue to bake for 30 minutes, or until the turkey is browned.

Transfer the turkey onto cutting board and tend with aluminum foil.

Allow to rest 10 minutes.
