Ingredients

  • 8 chicken breast fillets around 600g
  • 110 g arugula
  • 120 g soft goat cheese
  • 10 g pine nuts chopped
  • 10 ml olive oil

Instructions

  1. Heat oven to 220C.
  2. Season the chicken with salt and pepper.
  3. Place the chicken in front of you, smooth side down.
  4. Lay each fillet with arugula, crumbled goat cheese, and pine nuts.
  5. Starting with the narrow end, roll up the chicken tightly and seal with a toothpick.
  6. Heat some oil in a skillet. Brown the chicken in a skillet, 1-2 minutes.
  7. Transfer the chicken onto baking sheet. Roast for 10-12 minutes.
  8. Remove toothpick from the chicken.
  9. Slice and serve.
