Ingredients
- 200 g tomatoes seeded, diced
- 1 cucumber shaved
- 400 g cooked quinoa
- 30 ml olive oil
- 15 ml lemon juice
Instructions

Toss the quinoa, and cucumber in a bowl.

Add the tomatoes.

In a small jar, combine olive oil and lemon juice. Season to taste and shake the jar with lid applied.

Pour the dressing over the salad.
