Quinoa Salad (Vegan, Vegetarian)

  • 200 g tomatoes seeded, diced
  • 1 cucumber shaved
  • 400 g cooked quinoa
  • 30 ml olive oil
  • 15 ml lemon juice


  1. Toss the quinoa, and cucumber in a bowl.
  2. Add the tomatoes.
  3. In a small jar, combine olive oil and lemon juice. Season to taste and shake the jar with lid applied.

  4. Pour the dressing over the salad.
  5. Toss to combine.
  6. Serve.
