Stuffed and Baked Mushrooms (Vegetarian)

  • 4 85g portabella mushrooms, stems removed
  • 30 ml olive oil
  • 130 g ricotta cheese
  • 1 clove garlic minced
  • 50 g chopped spinach


  1. In a small bowl, combine olive oil and garlic. Season to taste.
  2. Brush the mushrooms with prepared mixture.
  3. Arrange the mushrooms onto baking sheet.
  4. Combine the ricotta and spinach. Stuff the mushrooms with the prepared mixture.
  5. Heat the broiler and position the rack 15cm from the heat source.
  6. Broil the mushrooms 10 minutes.
  7. Remove the mushrooms from the oven.
  8. Serve.
