Vegetarian Chimichanga (Vegetarian)

- 300 g mushrooms chopped
- 2 to matoes seeded, chopped
- 20 ml melted butter
- 170 g shredded Mexican cheese Asadero Cheese
- 4 whole wheat tortillas
Heat oven to 200C.
Line the baking sheet with aluminum foil.
In a bowl, toss together mushrooms, tomatoes, and cheese.
Season to taste.
Spoon ¼ of the mixture into the center of tortilla.
Fold in the tortilla sides and roll tortilla from bottom to the top.
Place the chimichanga seam side down on the baking sheet.
Brush the tortillas with butter.
Bake the chimichanga for 25 minutes.
