Barley Kale Salad (Vegan, Vegetarian)

  • 100 g pearl barley uncooked
  • 400 g fresh kale stems removed, torn into pieces
  • 1 lemon juice, and zest
  • 30 ml olive oil
  • 2 cloves garlic minced


  1. Cook the barley in pot with salted water for 40-45 minutes, or until tender.
  2. In the meantime, heat 15ml olive oil in a skillet over medium-high heat.
  3. Add garlic and cook until fragrant, for 30 seconds.
  4. Toss in the kale and cook until wilted, for 6-7 minutes. Season to taste.
  5. Drain the barley, and transfer into a bowl.
  6. Add the lemon zest, and kale.
  7. Sprinkle the salad with lemon juice and remaining olive oil.
  8. Toss to combine.
  9. Serve.
