Coconut Oat Cookies

Ingredients

  • 1 large ripe banana
  • 160 g applesauce no sugar added
  • 40 g pure honey
  • 150 g rolled oats coarsely ground
  • 100 g unsweetened desiccated coconut

Instructions

  1. Preheat oven to 200C.
  2. Line a baking sheet with parchment paper.
  3. Line baking sheet with parchment paper.
  4. Mash the banana with a fork in a medium bowl.
  5. Stir in applesauce and honey. You should get a smooth mixture.
  6. Add oats and coconut and stir until well combined.
  7. Scoop the dough (1 ½ tablespoons each) onto a baking sheet and press gently to flatten the cookie mounds.
  8. Bake the cookies 15-20 minutes or until golden.
  9. Cool on a wire rack before serving.
