Coconut Oat Cookies

- 1 large ripe banana
- 160 g applesauce no sugar added
- 40 g pure honey
- 150 g rolled oats coarsely ground
- 100 g unsweetened desiccated coconut
Preheat oven to 200C.
Line a baking sheet with parchment paper.
Line baking sheet with parchment paper.
Mash the banana with a fork in a medium bowl.
Stir in applesauce and honey. You should get a smooth mixture.
Add oats and coconut and stir until well combined.
Scoop the dough (1 ½ tablespoons each) onto a baking sheet and press gently to flatten the cookie mounds.
Bake the cookies 15-20 minutes or until golden.
Cool on a wire rack before serving.
