Pea cauliflower fritters (Vegan, Vegetarian)

  • 1 small head cauliflower cut into florets
  • 200 g fresh peas
  • 50 g chickpea flour
  • 30 g flax seeds
  • 60 ml coconut milk


  1. Combine the flax and coconut milk in a small bowl. Place aside.
  2. Cook the cauliflower florets in a pot with salted water for 2 minutes. Add the peas and cook 2 minutes additionally.
  3. Rinse under cold water and place aside to drain.
  4. Transfer the veggies into food blender, and add the flax mixture. Process until coarse.
  5. Stir in the chickpea flour and season to taste.
  6. Heat some oil in a skillet.
  7. Portion out the fritters using an ice-cream scoop.
  8. Fry the fritters until golden-brown, or for 2-3 minutes per side.
  9. Serve warm.
