Quinoa stuffed eggplant (Vegan, Vegetarian)

  • 2 medium eggplants halved by length
  • 100 cooked quinoa
  • 30 ml olive oil
  • 1 shallot diced
  • 250 g chopped mushrooms


  1. Preheat your oven to 220C.
  2. Cut the eggplant in half by length, and scoop out the middle, leaving 0.5cm thick shell.
  3. Place the eggplant on baking sheet and drizzle with olive oil. Season to taste.
  4. Bake the eggplant for 20 minutes.
  5. In the meantime, heat remaining olive oil in a skillet.
  6. Add shallot and cook for 4 minutes.
  7. Add the mushrooms, scooped eggplant flesh, and cook 3 minutes.
  8. Stir in the quinoa and cook 2 minutes.
  9. Remove the eggplants from the oven. Stuff the eggplants with the prepared mixture.
  10. 10. Reduce the oven temperature to 180C.
  11. 11. Continue baking the stuffed eggplants or 10 minutes.
  12. 12. Serve warm.
