Soba Noodles with broccoli and carrots (Vegan, Vegetarian)

- 250 g soba noodles
- 30 ml olive oil
- 500 g broccoli separated into florets
- 200 g carrots cut to 1cm thick slices
- 30 ml coconut aminos or balsamic vinegar
Prepare the soba noodles according to package directions. Drain and place aside.
In a bowl, toss the broccoli with carrots, olive oil, and balsamic vinegar.
Preheat oven to 220C.
Transfer the broccoli and carrots into baking dish.
Roast the veggies for 15-18 minutes.
Remove the veggies from the oven and stir in the soba noodles.
