- 400 g cooked chickpeas
- 3 to matoes seeded, diced
- 1 large cucumber sliced
- 40 ml olive oil
- 15 ml balsamic vinegar
Toss the chickpeas, tomatoes, and cucumber in a bowl.
In a separate small bowl, combine the olive oil and balsamic vinegar. Season to taste.
Whisk the vinaigrette until emulsified.
Pour over the salad and toss to combine all the ingredients.
