Ingredients

  • 400 g cooked chickpeas
  • 3 to matoes seeded, diced
  • 1 large cucumber sliced
  • 40 ml olive oil
  • 15 ml balsamic vinegar

Instructions

  1. Toss the chickpeas, tomatoes, and cucumber in a bowl.
  2. In a separate small bowl, combine the olive oil and balsamic vinegar. Season to taste.
  3. Whisk the vinaigrette until emulsified.
  4. Pour over the salad and toss to combine all the ingredients.
  5. Serve.
