Roasted Tikka Chicken

  • 400 g broccoli
  • 700 g new potatoes scrubbed
  • 400 g chicken thighs
  • 30 g tikka curry paste
  • 25 ml olive oil


  1. Heat oven to 200C.
  2. Toss the potatoes, broccoli, and broccoli into a baking dish.
  3. Rub the chicken with tikka paste. Place on top of the veggies.
  4. Season all to taste with salt.
  5. Drizzle the veggies and chicken with olive oil.
  6. Roast the chicken thighs for 50 minutes.
  7. Remove the chicken from the oven and tent with foil. Allow to rest for 10 minutes before slicing and serving.
