Rosemary Lamb chops

  • 880 g lamb chops fat trimmed
  • 8 g lemon peel finely grated
  • 20 ml olive oil
  • 45 ml balsamic vinegar
  • 2 sprigs rosemary


  1. Combine 15ml olive oil, balsamic vinegar, rosemary, and lemon peel in a bowl.
  2. Add the lamb and cover with marinade.
  3. Allow to marinate for 15 minutes.
  4. Remove the lamb from the marinade and season to taste.
  5. Heat a large grill pan over medium heat.
  6. Coat it with the remaining oil. Add the lamb chops into heated oil and cook for 2 minutes per side.
  7. Remove the lamb and place aside.
  8. Pour the marinade into same pan and simmer for 2-3 minutes or until gently reduced. Drizzle over the lamb before serving.
