Combine 15ml olive oil, balsamic vinegar, rosemary, and lemon peel in a bowl.

Add the lamb and cover with marinade.

Allow to marinate for 15 minutes.

Remove the lamb from the marinade and season to taste.

Heat a large grill pan over medium heat.

Coat it with the remaining oil. Add the lamb chops into heated oil and cook for 2 minutes per side.

Remove the lamb and place aside.

Pour the marinade into same pan and simmer for 2-3 minutes or until gently reduced. Drizzle over the lamb before serving.
