Veal medallions and salsa

  • 8 80 g veal medallions
  • 4 medium tomatoes
  • 1 jalapeno pepper seeded, diced
  • 1 white onion cut into 0.5cm, round
  • Olive oil for brushing


  1. Set two grill pans over medium high heat.
  2. Slice 2 tomatoes in half. Brush the tomatoes, onion rounds and veal medallions with olive oil.
  3. Season to taste.
  4. Transfer the tomatoes and onions onto grill pan. Cook, turning occasionally, for 10 minutes or until slightly charred. Allow to cool.
  5. Transfer the veal medallions into heated pan and cook for 3 minutes per side.
  6. In the meantime, finely chop the remaining tomato and jalapeno and place into a bowl.
  7. Add the onions and charred tomato and season to taste. Toss to combine.
  8. Remove the veal medallions from the pan and transfer onto plate.
  9. Top with salsa and serve.
